3/4 cup milk
2 tbsp chia seeds
1 tsp vanilla bean paste
1/2 cup fresh or frozen raspberries
1 tbsp peanut butter
Leanne Ward (aka @the_fitness_dietitian)’s famous overnight oats are a quick and easy breakfast option that can save you some precious minutes in the morning. Just spend 5 minutes prepping the night before and you’ll never need to skip breakfast!
In an air-tight container or jar, mix the oats, milk, chia seeds and vanilla bean paste. Continue to mix until the chia seeds begin to swell. Add raspberries (you can mix them through or leave them on top).
Place in the fridge overnight to set.
In the morning, add peanut butter and enjoy!
Leanne says, “The recipe works best with rolled oats (not instant or quick oats). You can add an additional 1/2 scoop vanilla/natural protein powder if you do a lot of weight training or are looking to increase the protein in your diet. You can also swap out the milk and PB for any other type of milk or nut butter you please. I usually eat them cold from the fridge but you can also heat them up if you prefer.”
