Mushroom and Chia Soup

Ingredients
1 tbsp olive oil
1 onion, finely diced
2 garlic cloves, crushed
500g, large field mushrooms
2 tbsp parsley, chopped
1l water or stock
4 tbsp chia seeds
1 level tbsp Mugi miso
2 tbsp dry roasted pine nuts
Method

Heat oil in a medium saucepan and add onions and garlic to sauté for 2-3 minutes. Add mushrooms and parsley and stir, cooking on a low heat for a further 7-10 minutes.
Add stock or water and bring to the boil and then stir through chia seeds. Cover pan and reduce heat to simmer for 45 minutes.
Place miso in a small bowl and add 1-2 tablespoons of the broth and stir into a smooth paste. Place contents of the soup into a blender and blend until smooth. Return soup to the saucepan and add miso. Gently heat through but do not boil.
Serve with a garnish of parsley and pine nuts.
