Grain-Free Chia Buckwheat Pizza

Pizza Base
1 tbsp pine nuts
2 tbsp pumpkin seeds
40g (¼ cup) chia seeds
180ml (¾ cup) water
3 tbsp buckwheat flour
1 tsp dried oregano
1 tsp sea salt

55g (¼ cup) tomato paste
5 slices of Mozzarella cheese
1/4 of a red onion
30g (¼ cup) sun-dried tomatoes
6 cherry tomatoes, halved
handful fresh rocket
small handful of fresh basil

Additional suggestions:
sliced mushrooms, pitted olives, sliced peppers

Preheat oven to 180°C.
In a food processor add pine nuts and pumpkin seeds. Pulse a few times until coarsely chopped.
Transfer to a mixing bowl and add all other pizza base ingredients. Stir to combine for 2 minutes. Mixture will start to thicken.
Spread out the mixture onto a lined baking tray and press into a round shape, about 1 cm thick.
Bake for 35 minutes or until firm.
Remove from oven and add sauce, plus toppings of your choice and bake for an additional 10 minutes.
