Frittata with Chia Omega-3 Bread Crust

Ingredients
3 tbsp melted butter
8-10 slices Chia Omega-3 Bread
10 eggs
125ml milk
salt & pepper (to taste)
120g sweet potato, grated
1 medium onion, finely diced
1 red pepper, diced
2 tbsp fresh herbs, finely chopped
120g mozzarella, grated
70g feta, crumbled
Method

Preheat oven to 180°C. Prepare a round 27cm baking dish by rubbing with 1 tbsp melted butter and line with baking paper.
Trim off bread crusts; line bottom and up the sides by cutting bread to fit baking dish to form a crust.
Beat eggs, milk, salt & pepper together and mix in remaining ingredients, leaving some cheese for top. Pour into dish, and brush remaining melted butter on bread above egg mixture. Sprinkle remaining cheese evenly around the dish.
Bake for 35-40 minutes or until the centre is set. If bread is browning too quickly, loosely cover with foil.

Tip: This frittata can be frozen, thawed and reheated. Cover with baking paper and foil, bake at 180°C for about 35 minutes until heated through.
