Chia, Lemon and Blueberry Vegan Donuts

260g (2 cups) wholemeal flour
2 tsp baking powder
115g (¾ cup) coconut sugar
350ml (1½ cup) soy or nut milk
3 tbsp chia seeds
1 tbsp lemon zest
1 tsp vanilla
100g (1 cup) frozen blueberries

Preheat your oven to 200°C.
Grease donut moulds with some vegan butter (if you don’t have a donut mould you can use a muffin tin).
In a mixing bowl, combine the flour, coconut sugar, baking soda and chia seeds.
Add in the nut milk, vanilla, lemon zest and mix it together.
Fold in the frozen blueberries.
Spoon the batter into the donut moulds, filling them almost to the top.
Cook for 15 minutes, until risen and golden.
