Cauliflower, Amaranth and Chia Mash

90g amaranth grain, rinsed
500g cauliflower, trimmed and cut into florets
2 tbsp chia seeds
sea salt
cracked black pepper

Place amaranth in a pan with 300ml water and bring the liquid to the boil. Reduce heat to a simmer, cover pan and cook on a low heat for 18–20 minutes.
Steam cauliflower until it is tender, then once cooled a little, blend in a food processor until smooth.
Mix cooked amaranth, cauliflower and chia seeds in a large bowl. Season with a pinch of sea salt and cracked black pepper.
