Ingredients
150g (1 cup) pitted dates, chopped
70g (½ cup) frozen raspberries
120g (1½ cup) desiccated coconut, plus extra for coating
2 tbsp cacao powder, plus extra for coating
1 tbsp The Chia Co. chia seeds
2 tbsp coconut oil
1 tsp vanilla extract
75g (½ cup) dried cherries
65g (⅓ cup) dark chocolate chunks
Add 1 tbsp of water if required

75g (½ cup) dried cherries
65g (⅓ cup) dark chocolate chunks
Add 1 tbsp of water if required
Method
Place all ingredients except cherries and chocolate chunks into a food processor and blitz until the mixture is sticky and all dates are completely broken up.
Add dried cherries and chocolate chunks. Blitz again until mixture is well combined.
Press tablespoon-sized amounts of mixture together between your fingers.
Roll into balls, then into your coating of choice. Place on a lined baking tray and put in the freezer to set for an hour.
