Roasted Winter Vegetable Salad

Ingredients

1 red onion, cut into wedges
1 whole garlic bulb
2 beetroot, peeled & chopped (reserve washed leaves)
1 carrot, chopped
1 red potato, chopped
1 sweet potato, chopped
¼ pumpkin, chopped
2 tbsp olive oil
Juice of one orange
½ tsp salt
Handful of baby spinach
1 tbsp parsley, finely chopped
2 tsp The Chia Co. Salad Booster

Method

Preheat oven to 180 degrees Celsius.
Place all prepared vegetables in a roasting pan.
Cover in oil, orange juice and salt.
Roast for 35 minutes, turning vegetables occasionally.
Remove from oven when vegetables are cooked through.
Cool slightly, add baby spinach and chopped beetroot leaves, toss.
Add to serving dish and sprinkle with The Chia Co. Salad Booster.
