Spring Salad

Ingredients
200g asparagus spears
100g frozen peas
100g frozen broad beans
1 lemon, juice and zest
1/2 tbsp white wine vinegar
1/2 tbsp extra virgin olive oil
3 sprigs fresh mint, chopped
2 large courgettes
salt and pepper, to taste

Method

Bring a large saucepan of water to the boil and cook asparagus for 2 minutes. Remove from water and then add in peas and broad beans for 1 minute. Drain well.
In a small bowl, mix together lemon juice, zest, white wine vinegar, olive oil and mint. In a large bowl combine asparagus, peas and broad beans, then stir in the dressing and season to taste.
Slice courgettes into ribbons with a vegetable peeler or mandolin. Add to the rest of the salad and gently toss.
Top with Salad Booster and serve.
