Roasted Winter Vegetable Salad

Serves 4 people
1 red onion, cut into wedges
2 beetroot, peeled & chopped (reserve washed leaves)
1 carrot, chopped
1 red potato, chopped
1 sweet potato, chopped
¼ pumpkin, chopped
2 garlic cloves, crushed
1/2 tsp salt
2 tbsp olive oil
Juice of one orange
Handful of baby spinach
1 tbsp parsley, finely chopped
2 tsp chia seeds

Preheat oven to 180°C.
Place all prepared vegetables in a roasting pan with the garlic and salt.
Drizzle over oil and orange juice, tossing everything together until evenly coated.
Roast for 35 minutes, turning vegetables occasionally.
Remove from oven when vegetables are cooked through.
Cool slightly, add baby spinach and chopped beetroot leaves, toss.
Add to a serving dish and sprinkle with The Chia Co. chia seeds
