Couscous, Chia and Chickpea Salad Jars

Serves 2
165g (½ cup) cooked couscous (cooked to the packet instructions)
3 tbsp The Chia Co. Salad Booster or chia seeds
165g (1 cup) tinned chickpeas
4-6 falafels
2 tomatoes
30g (1 cup) baby spinach
handful coriander leaves
salt, pepper and chilli flakes to taste
tahini lemon dressing (2 tbsp tahini, 2 tbsp olive oil, 1 lemon)

Cook couscous as per packet instructions and leave to cool.
In 2 jars, put in the couscous mixed with chia seeds or The Chia Co. Salad Booster.
Add in chickpeas then falafels.
Layer tomatoes, diced, and baby spinach on top of the jar.
Top with a few coriander leaves, salt, pepper and chilli flakes.
In a separate container to take, make the tahini lemon dressing using 2 tbsp of tahini mixed with 2 tbsp of olive oil and 1 lemon juiced.
