3 ripe bananas, mashed
170g (½ cup) honey or maple syrup
3 tbsp chia seeds
125ml (½ cup) water
190g (1½ cup) gluten free flour
2 tbsp baking powder
150ml (⅔ cup) coconut water
65g (½ cup) walnuts
Preheat oven to 180°C.
First start by making your chia egg; simply mix chia seeds and water together in a bowl and let sit for 30 minutes until absorbed.
Mix butter, mashed banana, honey and chia egg in a food processor or mixing bowl until smooth. Sift in flour and baking powder; mix well until combined.
Transfer batter into a doughnut tin and bake for 20-30 minutes or until the bread is golden and a skewer comes out clean.
Serve with whatever garnishes you have on hand.
