Bakers Delight Signature Brunch Eggs on Toast

Ingredients
30g spinach
4 tomatoes
4 thick slices of ham
4 slices of Chia Omega-3 Bread
butter, for toast
4 eggs
a few fresh herbs leaves, optional
salt & pepper, to taste
Method

Sautée spinach in a frying pan with a little butter and salt. Pan fry or roast the tomatoes.
Cook the eggs to your liking (fried, poached or scrambled), then toast and butter the bread.
Place a slice of ham on each piece of toast followed by 1/4 of the spinach and tomatoes. Top with an egg and sprinkle with fresh herbs, if desired.

Tip: Be sure to cook enough spinach. It shrinks when cooked, and is great on the side if you make a little extra!
